Smashed Feta Flatbread
Meet the most delicious way to eat feta cheese this summer. These flatbreads are super satisfying and refreshing at the same time.
I’ve been seeing the idea of smashed feta all over Instagram.
Essentially, it’s just feta cheese, mixed with oil, vinegar, lemon juice, and fresh herbs. Everything is “smashed” together to make something that almost resembles a creamy dip-meets-dressing.
In short, it’s delicious.
I couldn’t stop thinking about it over a flatbread for summer. Deliciously grilled bread, savory smashed feta, and a crunchy chopped salad. The combination is so good.
I have to give credit to this meal too. It finally helped me to eat lunch.
I’ve had the toughest few weeks. A move to a new town; a disastrous house; no childcare; a car crash. Oh and we need to move again in 2 weeks.
To say my self-care has gone out the window would be an understatement.
I’ve been in survival mode. Eating what I can, when I can.
And for the most part, I’m okay with that. I know that a few weeks won’t make or break my health. And, as long as I eat something and don’t skip meals, I’m just going with it.
But finally, I made this recipe. And it kinda brought me back to life.
At last, I ate some veggies and something that wasn’t just convenient. And honestly, it felt amazing.
Nourishment is a form of self-care. And sometimes we just need a little push :)
Whether you need a push or not, this recipe is so delicious. Serve it as an appetizer to guests or make it for lunch or dinner! It’s so fun and comes together in no time.
Prepare the smashed feta
Prepare the smashed feta. In a large bowl, add the block of feta, olive oil, red wine vinegar, lemon juice, and dill.
Using a fork, break the feta apart into small pieces, then mash together with the other ingredients.
The mixture should be cohesive, with some feta chunks throughout. Set aside.
Chop the ingredients
Chop and dice 2 Persian cucumbers. Finely chop cherry tomatoes and red onion and fresh dill.
Prepare the salad
Prepare the chopped salad. Add the cucumber, tomato, red onion, and dill to a large bowl.
Add lemon juice & mix
Add lemon juice and salt and mix to combine. Set aside.
Grill the flatbread
Grill the flatbread. Brush the flatbread with olive oil lightly on each side.
Grill for a few minutes on each side until warm and grill marks appear (alternatively, you can also use a grill pan over the stove following the same instructions).
Assemble the flatbreads
Assemble the flatbreads. Add smashed feta on each flatbread, spreading it evenly throughout. Using a spoon, spread the chopped salad on top of the smashed feta.
Cut & garnish
Cut into pizza slices and garnish with extra dill.
Everything else you need to know:
Feta cheese: Make sure to use a block of feta in brine. It will retain the most moisture and be easiest to smash.
Flatbread: Use large flatbread or naan - both work great!
Grilling the flatbread: If you don’t have a grill, try grilling the flatbread on a grill pan or even on a pan on the stove. I have a grill but still opted to use a grill pan for ease :)
Storage: If making the flatbreads ahead of time, prepare the salad and smashed feta. When you’re ready to eat or serve, grill the flatbread and assemble.

- 1 8-ounce block of feta cheese

- 1/4 small red onion, finely chopped
- 1 tablespoon fresh dill, chopped
- Optional: 1 tablespoon fresh parsley, chopped
- 1/2 lemon, juiced
- Salt
- 2 large flatbreads (or na’an)
- 2 tablespoons olive oil
