Peanut Butter Chocolate Chip Oaties

If you love my Banana Chocolate Chip Oaties, I guarantee you’re going to love these. They’re basically the same thing, but swap the banana for peanut butter (plus a few other ingredients). What’s not to love?!

If you’re not familiar with them, my Banana Oaties are a delicious 3-ingredient snack made from just bananas, oats and chocolate chips. If you haven’t tried them yet - inserting a shameless plug to try them ASAP.

Believe it or not, I was asked a few times about how to make the banana oaties without banana. Which would be difficult, to say the least, because bananas are literally one-third of the recipe.

So, instead of somehow trying to make those without banana, I wanted to create a different version. But add peanut butter. Because peanut butter + chocolate is truly never a bad idea.

These oaties have 5 main ingredients: oats, peanut butter, maple syrup, egg and chocolate chip. Because we’re not using banana, the egg helps to bind the batter together. Plus, I love the additional protein that it adds! The peanut butter also some satiating dietary fat and protein, making this a pretty nutrient dense and filling snack.

Maple syrup is also added to these for some necessary sweetness, since the banana is omitted. I wouldn’t recommend not using maple syrup. It makes the oaties just sweet enough, but not overly sweet at all.

These Peanut Butter Chocolate Chip Oaties make a perfect snack, dessert or even breakfast. I love them on their own, added to a yogurt bowl, or even with some more peanut butter. I’m so excited for you to try them!

 

TOP TIPS

  • Eggs: I haven’t tried these with flax eggs, although I think they should work! Just make sure the batter holds together well enough before cooked to ensure that the oaties will stay formed once they’re baked.

  • Peanut butter: Any type of peanut butter works here. I used crunchy because it was all I had on hand, but creamy would be even better. If you’re using a thinner, natural peanut butter (I used Jif), you may need to add more oats to make the batter thick enough. For a nut free version, swap peanut butter for sunflower seed butter.

  • Maple syrup: The maple syrup adds sweetness to this recipe. If needed, honey can be swapped 1:1. It may change the taste slightly, but will still taste good.

  • Oats: I used quick cooking oats. Any type of regular oats will work, but make sure to avoid steel cut oats, as the texture won’t work well in this recipe.

  • Chocolate chips: Feel free to add more or less! Other mix-ins would also be fun here, like chopped walnuts or raisins.

  • Storage: Store these in an airtight container in the refrigerator for 3-4 days. You can also freeze them for up to 1 month.

Peanut Butter Chocolate Chip Oaties

Ingredients

  • 2 eggs
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 1/2 cup oats
  • 1/3 cup chocolate chips
  • Salt

Instructions

  1. Preheat oven to 350 F. Grease a baking sheet or line with parchment paper.
  2. In a large bowl, combine eggs, peanut butter, maple syrup and vanilla and mix well.
  3. Mix in oats until a thick batter forms. Fold in chocolate chips.
  4. Scoop mixture by the heaping tablespoon and place onto the baking sheet, using your hand to form into rounds as needed.
  5. Bake in the preheated oven for 15 minutes, or until cooked through.
